Simple but ooh-so-colourful summer salad
Simple and easy to make Microgreens and Berries Summer Salad
Ingredients:
Mixed leaf salad (different colours if possible)
Dill
Blackberries
Blueberries
Pomegranate
Radishes
Cucumbers
Sunflower Seeds
Edible flowers (Sage flowers are used in this photo)
Sprouting seeds Microgreens (Microgreens are a later stage of sprouting seeds, both are available in any health food shop and some supermarkets)
Dressing:
An empty bottle
Olive Oil
Thick balsamic vinegar
Pomegranate molasses (available in Sainsbury's, on the salad dressings shelf)
Fill a large shallow salad bowl with the mixed salad leaves, then place some of the dill carefully around, as well as falling over the edge.
Cut the cucumbers and radishes into chunks and add to the salad bowl.
Sprinkle the sunflower seeds and pomegranate evenly over the salad, followed by the berries and last arrange the microgreens and sprouted seeds over the top.
Fill the empty bottle with 1/2 of Olive oil, 1/4 of balsamic vinegar and the last 1/4 of pomegranate molasses.
Shake well and Voila!
